Vinification: Destemmed. Spontaneous fermentation with indigenous yeasts in stainless steel, daily punch-downs. All varieties vinified separately and blended following alcoholic fermentation. No fining. No filtration.
Aging: Stainless steel. Bottled June 28, 2023.
