Harvested by hand. 7-to-8 day whole-bunch maceration (with a few crates lightly crushed by foot) followed by gentle, slow pressing. No pigeages or pump-overs. Aged eight months on fine lees, 65% in concrete tank and 35% in vintage white tanks. Untouched until bottling. No fining or filtration; unsulfured.
Total SO₂: <12mg/l. 5,000 bottles produced.
