From steep slopes of marl-limestone terroir. Harvested by hand. Four-hour direct press of whole bunches followed by light débourbage. Malolactic fermentation achieved. Aged on full lees for 11 months; 50% in Alsatian foudre, 30% in barrel, 20% in sandstone jar. Untouched until bottling. No fining or filtration; unsulfured.
Total SO₂: <12mg/l. 8,200 bottles produced.
