Farming: Practicing organic. Vines have been farmed organically since planting in 2001.
Harvest: By hand. No destemming.
Vinification: Whole-cluster maceration for 2-3 days, then pressed. Varietals blended directly following pressing. Spontaneous fermentation with indigenous yeasts. No fining. No filtration.
Aging: 11+ months in stainless steel. Bottled September 30, 2019.
