Farming: Barley and wheat sourced from partner farms within 50km of brewery (Barley variety: Salamander). Dry-farmed. Practicing organic.
Brewing: Spontaneous fermentation with indigenous yeasts in steel tank. Malt wort poured over grape marcs, followed by aging. No fining. No filtration.
Aging: 7 months in stainless steel. Bottled May 2021.

Artisanal sour ale, electric pink in color with bright red fruit nose. Pronounced raspberry and tangy notes with stimulating acidity. Made with grape marcs (10%) from Olivier Boulin of LeNezDeGoth (Jura). Aging potential 2+ years.
