Farming: Barley and wheat sourced from partner farms within 50km of brewery (Barley variety: Salamander). Dry-farmed. Certified organic.
Brewing: Spontaneous fermentation with indigenous yeasts in steel tank. Malt wort poured over grape marcs, followed by aging. No fining. No filtration.
Aging: 7 months in stainless steel (75%) and oak barrel (25%)l. Bottled May 2021.

Artisanal sour ale, creamy in color with bright citrus nose. Light and easy texture with soft agrume and kumquat notes and balanced acidity. Fermented and macerated Alsatian Muscat grape marcs cultivated by Lambert Spielmann (“This is Mu Ska” 2021). Aging potential 2+ years.
