Winemakers: Thomas Popy
A native of the Beaujolais, Thomas began his journey into the depths of winemaking chez Michel Guignier and, most notably, the late Julie Balagny in his native region before coming to the Jura to complete a viticulture & oenology degree in 2014. It is here, in a discreet valley surrounded by the limestone cliffs of the Jurassic plateau, that he ended up staying, enticed simultaneously by the solitude of the surrounding nature and the unique solidarity of the region's winemaking community.
Cultivating what are amongst the most exceptional vineyards of the northern Jura, Thomas' extremely non-interventionist approach spans from plot to cellar. Every task is done by hand, with no mechanization--whatsoever--used in the vines or the winemaking process. Harvested amongst friends, all grapes are pressed using a wooden basket press, the juice transferred into tank by way of gravity only. Quietly evolving over the course of up to four years in barrel, with subsequent aging in bottle, his rudimentary approach evokes an emotional slowing down and a rethinking of perspectives, where patience is not only a virtue, but a means of creating.
