Vinification: Direct press of whole bunches. Spontaneous fermentation with indigenous yeasts. Aging on fine lees for 7 months in Alsatian foudre until tirage in mid-April 2020, followed by aging in bottle for one year (minimum) followed by disgorgement. No fining.

Notes: A classy and complex crémant, with a delicate effervescence marked by both rich and ephemeral notes—quince, yellow plum, and rhum—backed by a pronounced freshness and lingering limestone minerality. For aperitif and gastronomy alike.
