From the south-eastern exposed marl-limestone terroirs of Saint-Jean-de-la-Port. Harvested by hand. Four-hour direct press of whole bunches followed by light débourbage. 46% of alcoholic fermentation in Alsatian foudre, 35% in sandstone egg, 19% in barrel. Malolactic fermentation achieved. Aged on full lees, untouched until bottling. No fining or filtration; unsulfured.
Total SO₂: <12mg/l. 3,800 bottles produced.
