Single-plot selection from steep red clay slopes of the lieu-dit "Coteau de la Mort" within the Saint-Jean-de-la-Porte Cru. Harvested by hand. 8-day whole-bunch maceration (with a few crates lightly crushed by foot) followed by gentle, slow pressing. No pigeages or pump-overs. Aged 11 months on fine lees, 50% in terra cotta amphora and 50% in demi-muids. Untouched until bottling. No fining or filtration; unsulfured.
Total SO₂: <12mg/l. 1,800 bottles produced.
