Single-plot vineyard at 600m elevation; terroir of red clay with high limestone content. Harvested by hand two weeks following the vines for La Pente (at 300m) in order to achieve full physiological maturity. Four-hour direct press of whole bunches followed by light débourbage. Malolactic fermentation achieved. Aged on full lees for 11 months in Alsatian foudre. Untouched until bottling. No fining or filtration; unsulfured.
Total SO₂: <12mg/l. 2,500 bottles produced.
