Vinification: Select whole cluster, left overnight in the cellar to cool. Semi-carbonic fermentation in small containers, without any additions or intervention with the exception 10 mg/l of SO2 after malolactic fermentation. Horizontal press (10hl) following two-week maceration. Spontaneous fermentation with indigenous yeasts. No fining. No filtration.
Aging: Barrel, 6+ months
Sulfur added: 10 mg/l of SO2. No active sulfur present in analysis.
Notes: A big, bold and juice-forward embodiment of old-vine Morgon at its best. Powerful and solar, with effortless drinkability and fun.
