Winemakers: Cabaret des Oiseaux
Jude and Lucile Spaety of Cabaret des Oiseaux have been quietly and consciously developing and refining their domain since its creation in 2017. Located on a side-street of the picturesque village of Saint-Lothain in the central part of the Jura region, they work two hectares of vines--the majority of which surround their home (or are easily accessible by foot or horse), allowing for quick access and a minimal carbon footprint. Both agricultural engineers by trade, they relocated from Paris to the countryside to pursue winemaking following Jude's formative internship with Cécile and Steve Gormally of Les Dolomies (where he was also introduced to Thomas Popy, their employee at the time).
While Lucile continues to work full-time in order to support the growth of the domain, Jude teaches (very insightful and animated) agronomy classes for the Viticulture & Oenology degree at Montmorot, which is where we were first introduced. He is open and innovative with his approaches in the vineyard, and perhaps most well-know both within and outside the region for the pergola vine system he has meticulously installed for his hybrids (first harvested in 2025), which supplement the traditional varieties of Chardonnay, Savagnin, Trousseau, Pinot Noir of their other plots. Jude explains this experiment as a type of insurance policy for years with difficult climates--essentially every other year in the current moment in the Jura--in particular against huge losses attributed to frost.
